I can't begin to imagine buying a nice fresh vegetable online! I buy

it

at markets in Chinatown here in Philadelphia and it is about the sme

price per pound as zucchini in a normal US supermarket. It's an

important part of several dishes some of my Asian friends, especially

Chinese and Burmese, make.

 

My acupuncturist's Burmese assistant gave me this recipe several

years

ago, ststing at the time that the bitter melon was good for blood

sugar

control. Look how long it has taken western medicine to catch up with

ancient Chinese knowledge!

 

Suu Kyi's Soup with Bitter Melon

 

1 T. peanut oil

 

5 cloves garlic, peeled and minced

3 " fresh ginger, peeled and minced

1 stalk lemongrass, peeled and minced

1 small onion peeled and minced

1 or more (to taste) Thai birds-eye hot peppers, minced

 

1 quart water

1/4 cup miniature dried shrimp

2 cups bitter melon, thinly sliced into half moons

1 large bunch Shanghai bok choy, well washed and sliced

1/2 block tamarind paste, soaked in hot water and seeds removed

 

Cooked brown rice, as much as you like (use leftovers)

 

Fresh sliced scallions (white and green parts) and/or fresh cilantro

to

garnish

 

Heat oil in a soup pot and add first group of ingredients. Cook,

stirring, until intense fragrance fills the whole house. Add water

and

remainder of ssecond group of ingredients. Reduce heat, cover and

simmer 15 minutes.

 

Sir in brown rice and serve topped with garnishes.

 

Serves 4.
