With 3 former foster boys, now in their 20's here for tomorrows New Year's Day Dinner, plus 3 of UW football players (my mistake) I told them if they won the Alamo Bowl I would fix them dinner. Who knew Colorado was ranked 12th! I am sure many folks think that should not have happened! Needless to say I had little to say about the menu, LOL As Doc would say it is an Irish household and therefore I do have 49% of the vote, (however verbal I choose to be). So I am preparing... Peanut soup Spinach salad, with beets, walnuts, and gorgonzola cheese a Virginia Country Ham (takes 3 days to prepare, yes, I am blessed). Apples and Cabbage, seasoned with coarse pepper, rosemary and thyme. Roasted Garlic Mashed Potatoes Black and White Irish puddings Irish Soda Bread Sweet Potato Pie Persimmon Pudding Plenty of Guinness Lots of Jamesson's Irish coffee for me Sounds like a lot when you look at it this way but 7 men at the table I will be lucky if I have seasoning ham or the ham bone left.
