Howdy folks! :-)

I was wondering if anyone has a favorite dipping sauce recipe for fried

calamari?

I want something other than the typical Red Italian style tomato sauce

for it. I had this wonderful dipping sauce for fried calamari in Turkey,

but I didn't get the recipe and my Turkish connection is traipsing

around the US at the moment ;) So.. I figured I'd ask the connoisseurs

here if anyone had any favorites ;)

Here's one that I use:)

Lemon (Fresh Squeezed)

Butter(Purified)

Garlic

Sweet Basil

Sweet bell pepper

Take 1 lb butter, Heat it and purify it. Squeeze 5 lemons and set aside, Chop 1

whole clove of garlic and put in butter and place back over heat add in palm

full of sweet basil. Chop on medium bell pepper and place it pot also. When

everything is cooked down Strain out the butter and add lemon to taste.

I tried cutting this down for you. We usually make it by 6 lb at a time so that

we always have some on hand:)
