Yes, Thank you Jack for sharing this information with the group.

It is very important that anyone using larger amounts of cinnamon for

health reasons be sure to only use the real cinnamon (Ceylon), rather

than the cheap imposter cinnamon (cassia) sold as cinnamon here in the

USA. As using the wrong one can actually cause health problems, rather

than fix them.

The quality of cinnamon is more about the species of the tree

than where it is grown. If you have a concern regarding coumarin, then

dilute some tincture of iodine and make a liquid paste of the cinnamon

sample. If it contains a large amount of coumarin, it will turn a deep

purple. I would remind the group that coumarin is given to millions of

people every day as a blood thinner, so it is not very toxic and the amount in

cinnamon is small. All cinnamon tree species will produce some, but the

cassia species produces the most.
