It is very important that anyone using larger amounts of cinnamon for health reasons be sure to only use the real cinnamon (Ceylon), rather than the cheap imposter cinnamon (cassia) sold as cinnamon here in the USA. If you have a concern regarding coumarin, then dilute some tincture of iodine and make a liquid paste of the cinnamon sample. If it contains a large amount of coumarin, it will turn a deep purple. I would remind the group that coumarin is given to millions of people every day as a blood thinner, so it is not very toxic and the amount in cinnamon is small. All cinnamon tree species will produce some, but the cassia species produces the most.
