Staph infections are especially through milk contaminated by cows affected with mastitis, but usually the authorities will put the blame on the public, accusing food handler contamination or improper cooking. Coli and others bacteria: • Store ready-to-eat foods at 40 degrees Fahrenheit or lower--use a refrigerator thermometer to check the temperature. • Use perishable and ready-to-eat foods as soon as possible. • Clean the refrigerator regularly. • Clean: Wash hands and surfaces often with hot, soapy water. Always wash hands, cutting boards, dishes, and utensils with hot, soapy water after they come in contact with raw food. • Separate: Do not cross-contaminate. Keep uncooked foods separate from vegetables, fruits, breads, and other foods that are already prepared for eating. • Cook: Cook to safe temperatures. If you are at risk for listeriosis, reheat luncheon meats, cold cuts, and other deli-style meat and poultry until they are steaming hot. • Chill: Refrigerate or freeze perishables, including ready-to-eat foods, promptly. • Do not eat hot dogs and luncheon meats, unless they are reheated until steaming hot. • Do not eat soft cheese such as feta, brie, and Camembert, blue-veined cheeses, queso blanco, queso fresco, and Panela unless it is labeled as made with pasteurized milk. • Do not eat refrigerated pâtés or meat spreads, canned or shelf-stable pâtés and meat spreads may be eaten. • Do not eat refrigerated smoked seafood, unless it is contained in a cooked dish, such as a casserole. Refrigerated smoked seafood, such as salmon, trout, whitefish, cod, tuna, or mackerel, is most often labeled as " nova-style, " " lox, " " kippered, " " smoked, " or " jerky. " These fish are found in the refrigerated section or sold at deli counters of grocery stores and delicatessens. • Canned or shelf-stable smoked seafood may be eaten. • Do not drink un-pasteurized milk or eat foods that contain un-pasteurized milk. • Keeping ready-to-eat foods cold is key to reducing listeriosis, a serious infection in humans. My Comments: By the way, in case researchers of the FDA were not aware, Listeria survives perfectly through refrigeration. Yingchan Han Purdue food science researcher published in Food Microbiology, Purdue's Center for Food Safety Engineering includes nearly 90 university scientist Maybe it is time to start providing patients and the public with real information and not with condescending advice. It is time to stop looking at the public as ignorant, pathetic, or powerless. To prevent Listeriosis and other Foodborne Illnesses, we have to go to the roots of the problem, to the food, to our farming and sanitary laws. Telling people " to eat canned, smoked and shelf-stable smoked seafood " is not a solution, it is an insult to the intelligence of the public. The USDA's own publication, reported that " heavily contaminated flocks may result in a contamination rate of 100 percent for finished products. " USDA Food Safety Review. ================================================================== A very small number of laboratories nationwide are equipped and have the knowledge to deal with new strains of bacteria. Like new staph , flu and e-coli. 'Most bacteria have not been characterized, and only about half of the phyla of bacteria have species that can be grown in laboratory. There are typically 40 million bacterial cells in a gram of soil.' There are approximately ten times as many bacterial cells in the human flora of bacteria as there are human cells in the body (wikipedia) Our wonderful self healing immune system know how to deal with bacteria. What it don't know : is to deal with the new super bugs, king Kong size monsters resulting from our uses of antibiotics designed to help us humans to fight disease used on a daily base in animal farming. Now we created new monsters that are unmanageable. I live in California where raw milk has been sold for many years in health food stores and farmers markets.... not one case of any of the diseases you mentioned has happened... not one in millions of users. Raw milk does contain alot of beneficial bacteria and immune boosters which prevent disease, not cause it. If it is produced in unsanitary conditions and is allowed to spoil then you might be on to something, but the farmers who produce this here are reputable and responsible. All of his samples were analyzed by an independent lab for any pathogens. They all came back at 0, and to date no samples of his raw milk have ever tested positive. Well to take the argument further, the lab actually added strains of listeria, salmonella, E-coli 0157, and Campylobacter at very high levels to his raw milk. None of the pathogens were able to grow and within 24 hours the beneficial bacteria were able to produce a complete die-off of those 4 pathogens. A few years later, UC Davis came out and tested samples of his herd's manure. The entire herd was clean for any traces of E-Coli 0157. I have treated many farming families during my career. I can't recall one dairy farmer that ever opted to buy "store bought" milk. They simply kept their fridges stocked from the bulk tank. You would think that if dairy farmers and especially their kids were dropping like flies from drinking raw milk we might hear about it in the news. What we have heard about in the news quite frequently is all of the infectious outbreaks of the 4 above mentioned pathogens plus Hepatitis coming from none other than vegetables. Spinach, lettuce, peppers, and tomatoes are the biggest ones coming to mind. I'm not trying to condem veggies and argue that one should forgo all of those. What I am trying to point out is that ANYTHING has the potential to cause harm. The environment is which our food is produce or raised is everything. One last point, have you read the book, "Milk Diet: As A Remedy For Chronic Disease" by Dr. Charles Porter, M.D. The copyright on it had expired so Heather Zimmerman (a humble Mom from Wisconsin had it republish). With this book, she was able to cure her 4 year old daughter from severe asthma. Dr. Porter established a hospital in Rochester, MN (the same hospital that went on to become the Mayo Clinic) where patients would come to stay and receive "The Milk Cure". Patients consumed mainly raw milk, fermented raw milk, and colostrum. During the 41 years of his professional practice, he cured or relieved more than 18,000 people using this simple food. He treated all forms of heart disease, high blood pressure, obesity, Rheumatoid Arthritis, Chronic Inflammation, every type of digestive disorder, diabetes, diseases of the kidneys, asthma, allergies.
