Guest guest Posted April 19, 2009 Report Share Posted April 19, 2009 Here is a quick & easy Mexican Veggie Soup/Chili Bag of Frozen Mixed Veggies (many stores sell bags of veggies that are made for soup) Ground beef and/or Ground chuck (about 1lb or more to your liking) 2 cans of Tomato Soup 1 can of Diced Tomatoes (using the can with Basil, Garlic or other seasoning just adds to this) Jar of salsa (Mild, Medium or Hot) whatever your preference Directions: Prepare your ground meat in the frying pan then add to Crock Pot the Veggies, Ground Beef, 2 cans of Tomato Soup, diced tomatoes and the Salsa. You can add the whole jar of Salsa or 1/2. Depends on how spicy you want it. I prefer to have this pretty thick but you can add water to make it more soupy. Cook in crockpot until WARM....serve with Chips and/or Crackers of your choice. Since I created this one on my own I don't have true measurements but I truly don't think you can't screw it up in anyway. I think fresh veggies would help and no meat would be best.
