Perhaps I should offer what I have learned of acid/alkaline balance at this point in the discussion regarding the value of an alkaline PH environment. Quite a number of years ago I came upon the writings of Michio Kushi and other people knowledgeable of macrobiotics. I read articles in the East West Journal of the importance of acid/alkaline balance as a means of preventing dis-ease. So much of the standard American diet is acidic forming in the body - such as bread, noodles, oatmeal, meat, sugar - especially during the winter months when less fresh fruits and vegetables may be available. I remember reading how germs and viruses can not live in an alkaline environment. They simply can not grow. Doctors had told me to have a hysterectomy when I was only 23. I said no to that room of well intentioned doctors. I wanted to be a mother. Shortly following my diagnosis I was blessed to find an article written by Michio Kushi explaining that some people are unable to digest dairy foods - that dairy can cause difficulties in the body. It was very difficult but I chose to eliminate dairy from my diet for one month. I had already chosen to become a vegetarian - over relying upon dairy for protein - so I needed to learn other means of obtaining protein in my diet. In one month time all illness left my body - all congestion - all symptoms disappeared. I understand now that my liver had been severely congested affecting my entire body. In gratitude I was given the opportunity of having a child - a son - when I was 26. A son who is now 30 with 3 children of his own. In raising my son on a macrobiotic diet I chose to include more fresh fruits - such as pears - and vegetables - such as carrots - than traditional macrobiotics may advocate - yet following the basic principles of macrobiotics choosing unprocessed whole grains and seasonal foods available in the area where we lived - rather than eating 'tropical' fruits [as one example]. Miso - fermented soy protein - became an indespensible part of our diet - because it is alkaline - has the ability to rebalance the system if/when necessary. Would not want to give people the wrong impression of macrobiotics. Not all macrobiotics are vegetarians. But a recent article written by Michio Kushi now advocates nuts as a primary source of protein rather than fish as suggested 20+ years ago.
