Guest guest Posted June 14, 2004 Report Share Posted June 14, 2004 Caroline, the pasta machine comes with a recipe created for use with the machine, however..... from my Italian cookbook: 2 1/2 to 3 cups of flour 3 eggs a pinch of salt about 3/4 to 1 cup of water 2 tblsp Oil Sift 2 1/2 cups flour into bowl or (onto board and make well in center) Mix together eggs, 3/4 cup of water and oil, slowly add mixture to flour while kneading with fingers. Knead for approx 8 to 10 minutes until dough is smooth and elastic. Cover and allow to rest for 15 to 30 minutes. roll out and then cut as desired. For flavored or colored pasta add juice in place of water; such as bellpepper, spinach, carrot or even mushroom. Just curious because you said yours was too dry and that you had to cook it much longer than the recommended 60 seconds.
