Caroline,

the pasta machine comes with a recipe created for use with the

machine, however.....

from my Italian cookbook:

2 1/2 to 3 cups of flour

3 eggs

a pinch of salt

about 3/4 to 1 cup of water

2 tblsp Oil

Sift 2 1/2 cups flour into bowl or (onto board and make well in

center)

Mix together eggs, 3/4 cup of water and oil, slowly add mixture to

flour while kneading with fingers.

Knead for approx 8 to 10 minutes until dough is smooth and elastic.

Cover and allow to rest for 15 to 30 minutes.

roll out and then cut as desired.

For flavored or colored pasta add juice in place of water; such as

bellpepper, spinach, carrot or even mushroom.

are!! I got my sprouted flour in so I am ready to try it. I don't

have a pasta maker but have no issue with rolling out the pasta and

cutting it...you know...the old fashioned way!! lol I would make

something more along the lines of fettucini.

Hi Sylvia, Is this the recipe you used in your machine, or did you use the recipe that the machine came with? Just curious because you said yours was too dry and that you had to cook it much longer than the recommended 60 seconds.
