Hi Shaman,

 

We've been told that saturated fats are bad for us for half a century now, but

the truth of the matter if that no one has actually proved it. It is not, in

fact, a fact!

 

Trans fatty acids are linked to heart disease - saturated fats are heart

healthy, as are monounsaturated fats like olive oil.

 

Before the 1950's, there was very little heart disease in the U.S. We only saw

heart disease rates increase after World War II, and increase they did!

 

What was the difference?

 

First, let's take a step back to before the increase in heart disease. Back

when the food industry touted that coconut oil was the most superior oil for

baking and cooking. In fact, coconut oil used to be a significant part of the

American diet. Meat, butter and lard were too, by the way. We ate all these

saturated fats for decades, yet heart disease was barely heard of.

 

Then during WWII, the Japanese took over most of the South Pacific and the

Philippines. Americans were cut off from their suppliers of coconut oil and had

to make due with substitutes. This is when the polyunsaturated oils began

showing up - and when heart disease rates really started taking off.
