Hello,

Can you tell me more about Amaranth please ? The only part of the plant i've

seen is the puffed seeds which i buy as a cereal for breakfast. Other people

eat the vegetable as a whole. What is the difference in terms of nutrition etc

? Which is best ? I've been wondering this for a long time. The packet of

cereal i buy lists all the nutrients in amaranth, but i wonder if they survive

the high heat needed to puff them into the finished product.
