Guest guest Posted May 21, 2008 Report Share Posted May 21, 2008 I am very much into nutrition. I can't afford to eat organic, but I do eat healthful foods. My problem? I pretty much dislike all vegetables, both cooked and raw. I eat about 5-7 servings of fresh fruit daily and I get 4 servings of veggies daily by drinking " veggie shakes " . (I also eat cashews and almonds daily). I take 1 cup of frozen mixed greens (turnip greens, mustard greens, kale)and 2-10 inch stalks of celery. I put that in the blender with water and about 2 ounces of lime juice to kill the veggie taste. I drink that down twice a day. 1. Would it be good to replace 1 of the celery stalks with a serving of cucumber? Possibly replace the celery all together with a more nutrient dense vegetable? 2. Can you think of any other vegetable that would compliment the mixed greens in terms of nutrient profile that will also blend easily into a slurry and won't have too strong of a taste? 3. Any other suggestions? I can't eat salads. I don't like any cooked vegetables either. I thought about getting a juicer, but aren't many of the nutrients in the vegetable skin? I know that I need 4 servings of veggies a day. So far, chugging down 2 vegetable shakes is the only way I can get them. Note: I can drink just about anything (but not v-8 juice). So if we can make put it in the blender and make it into a slurry, I can cover the taste with lime juice and chug it down. In our Resort we use `Ayurvedic cuisine`for preparing vegetable dishes. Guest guest Posted May 23, 2008 Report Share Posted May 23, 2008 What you are doing is great, but what I would suggest is maybe 1/2 an apple or 1/2 a pear to add a bit more fiber and a sweeter flavor. The Cucumber is a great idea it acts as a very mild diaretic and will gently flush and clean the kidneys and liver. Maybe add a carrot or two for an additional sweetness and added cartinoids.
