I have a question...

 

I LOVE corn tortillas...I usually make my own...with Mesa Harina (corn meal)...I would imagine I can buy this organic...right? Or would I have to make it myself?

I have yet to find an Organic version of Masa Harina. You can make

your own masa though using organic ingredients.

 

I made an organic cornbread the other day using some yummy organic

blue corn meal.

Well..... from a recipe of course LOL

 

For flour - you roll them out.

 

For corn you can press them or do it traditional and form with your

hands. I wont use a press because every single one i have seen is

aluminum. I keep telling hubby i will make a cermaci one, but i

still need to buy my own kiln before that is going to happen.

Tortillas are easy! Especially corn...really....it is just a matter of taking corn flour...not meal...sorry...my bad on that part...and mixing it with water until you get a solid ball. You then make small balls about the size of a golf ball. Put them on a plate and cover with a moist towel. I then use my tortilla press and put two pieces of parchment paper inside...put the ball of mix in the middle and press. This flattens the tortilla. You then cook them on a heavy griddle (I have a fantastic cast iron griddle I use for these)...about medium high. You cook the first side for about 30 seconds...and the second side for about 1 minute. Then turn it over again and cook the tortilla until if puffs just a bit...make sure you don't cook it until it is crisp...usually about another 30 seconds. Put this on a plate and cook the next one.

 

For flour tortillas...this is what I know I will be able to do! lol Use sprouted wheat flour...a little vegetable oil or I like to use organic olive oil...and some water to form a ball that is slightly sticky. You will then knead this ball on a floured surface for about 5 minutes...basically until smooth. Set aside for about an hour. Divide the dough into golf ball sized balls. Roll out the balls on a lightly floured surface until they reach the size that you want. Make the balls smaller or larger to suit your purpose. You then cook it the same way as the corn tortillas.

 

VERY yummy!

Sylvia,

 

The tortilla never touches the metal...if you use parchment paper on each side...which is what I do...and why I got the aluminum tortilla press! You can't use it without some kind of barrier...and it is only there for a few seconds...a good press and your done.

Hmmm...this will make my life very difficult if I have no Masa Harina....I do truly believe I was Mexican in a past life...because I am so totally addicted to Mexican foods and LOVE hot stuff!! lol

I dont remember what else (if anything) is in Masa Harina.

 

Basically you just need corn flour, salt and water. If you cant find

a fine corn flour, you can always process corn meal in rpocessor or

coffee grinder until it is finer.

 

Luckily, my co-op carries not only Yellow corn flour, but also blue

corn flour!

I've always wondered how to make my own. I don't have a press, but I assume I can just use a rolling pin. Might not be as perdy but it'll do!

a rolling pin is great for flour torilla's, however...

you might not get the results you want for corn tortillas. If you

dont have a press, then you can do them the traditional way which is

to pat the ball of masa between your hands until you get it flat and

tortilla shapped. I've tried myself but i dont have the patience

and i'm so anal about having things look a certain way that i dont

 

That way is actually an art if you have ever seen anyone hand pat

them!

How about putting the dough ball between two plates lined with parchment paper, and just gently pressing down until the desired thickness is achieved?
