Guest guest Posted May 26, 2004 Report Share Posted May 26, 2004 Bagel Recipes 2 c Warm water (100 to 115 deg.) 2 pk Active dry yeast 3 tblsp Honey 3 tsp Salt About 5 3/4 cup sprouted wheat or spelt (or half and half)(unsifted) 3 qt Water with 1 Tbl sugar Cornmeal 1 Egg yolk beaten with 1 Tblsp water Combine water and yeast in the large bowl of an electric mixer; let stand 5 minutes. Stir in honey and salt; gradually mix in 4 cup of the flour. Beat at medium speed for 5 minutes. With a spoon, mix in about 1 1/4 cups more flour to make a stiff dough. Turn out on a floured board and knead until smooth, elastic, and no longer sticky, about 15 minutes; add more flour as needed (dough should be firmer than for most other yeast breads). Place in a greased bowl, cover, and let rise in a warm place until almost doubled, about 1 to 2 hours. Punch down dough and then knead lightly; divide into 12 equal pieces. To shape, knead each piece, forming it into a smooth log about 6in long. Loop around to form a circle, wet both ends and then pinch to seal. Place shaped bagels on a lightly floured board, cover lightly, and let stand in a warm place for 20 minutes. Lightly grease a baking sheet and preheat oven to 400 deg. Bring the water-sugar mixture to boiling in a 4 or 5 quart pan; adjust heat to keep it boiling gently. Gently lift one bagel at a time and drop into water; boil about 3 to 4 at a time, bagel will sink when dropped and then rise to surafce after about 1 to 2 minutes, when it rises, gently turn it and boil for about another 2 to 3 minutes. Lift out with a slotted spoon or spatula, blot with a towel, dip bottom into cornmeal (optional) and place on the baking sheet. Brush bagels with the egg yolk glaze and if desired, sprinkle with onion, garlic or sesame seeds. Bake in a 400 deg.F oven for about 30 minutes, or until well browned and crusty. Cool on a rack.
