I graduated from Scottsdale Culinary Institute in 1997... You learn how to cook good and gain weight, LOL We did have a lot of nutritional healthy cooking in school but most of it was french cuisine based...fattening and way too delicious. I did not work in the field after school as I would have had to take a huge paycut from the career I already have but I did enjoy it. You all have such yummy recipes. When i cook beans, i try to simmer them at the lowest possible setting that my stove will go so that they cook at a really low temp. It takes longer this way, but i dont lose alot of soup to escaping steam. If figure if you can brew potasium broth at the lowest setting and still get value, why not other soups? With rice, after i sprout it, i use a cheese cloth in my steamer and then steam the rice rather than boil it (when possible a banana leaf works really good in a bamboo steamer. Again, it takes much longer this way. Sometimes i cant wait as long and cook the normal way too, especially if i want Spanish style rice. I just figure if I am going to cook it , I am going to destroy the enzymes but I at least have those enzyme inhibitors out. Best to cook slow alright. Mmmmmm banana leaf ! All i have done is taken my old recipes and adapted them wherever possible to accommodate sprouted stuff, raw stuff , and making as much as possible from scratch. I even took a bagel recipe and used coconut oil and sprouted grain flour so hubby could enjoy bagels on Friday with everyone else (company buys employees bagels). I bet you could pick up any cookbook and go to town! not to mention a few recipes tucked up your sleeve! Just seemed like with all the recipes flying around and the difficulty of going back to find something in the archives, maybe it would be a good idea to have a file with just recipes in it.
