Guest guest Posted May 21, 2004 Report Share Posted May 21, 2004 I'm making beans tonight for dinner. I've soaked them since 3:00PM yesterday and the tough skins are coming off. Can I start them in the crock now? I don't see curly-cues. Does this mean they haven't sprouted? I should mention that they are Northern beans and I changed the water pretty often. :> Thanks, Lisa C. I've sprouted or cooked Northerns, whites (navy), pintos, black (turtle) and soak for 10 to 12 hours minimum and then sprout for 2 to 3 days. Guest guest Posted May 21, 2004 Report Share Posted May 21, 2004 With Northern or White beans i do sprouted barley and Mushrooms. for that combo i would use a whole onion, 2 cloves of garlic, some celery and 2 carrots, all minced. Litely sautee the veggies, add sprouted beans and enough water to cover the beans plus one cup extra. Bring to a light simmer, then lower heat, Cover and Cook (lower heat to maintain some of the nutrients) about 5 to 6 hours when they are soft, add the barley. **Be sure the beans are soft before you add the barley or the barley will be done before the beans!** Make sure to add water when you add barley too (2 to 1 ratio of water to barley) When the barley is tender add the minced mushrooms adjust salt and other seasonings to taste. Cook about another 45min to an hour. I keep organic veggie and herb bullion on hand an usually add a cube when making beans. and Cumin is a staple in almost everything i cook and i adjust less or more depending on what i am making. Every now and then i'd pick up a cook book and that always helps. Guest guest Posted May 21, 2004 Report Share Posted May 21, 2004 I've been cooking ever since I could reach the stove or oven from standing on a chair too. I've been told I'm a good cook. I've learned dishes from my mom or picked stuff up from cookbooks, but I like to experiment a lot too but I rarely use a recipe these days. I just flat out don't have the time to cook the way my life is right now. So, I just read your recipes and drool!!! LOL!! I do my mexi-mega mix with pintos and blacks. TONS of cumin, whatever peppers i have on hand and lots and lots of garlic! She said, "how much do you have?" One can never have too much garlic, or too many hot peppers!
