Guest guest
Here's one that I just tried earlier this month. One of my step sons gave me the recipe. 1 1/2 cups hulled pumpkin seeds, baked or raw 3 tbsp olive oil 1 clove garlic, minced 3/4 cups vegitable stock 1/4 cup lime juice 2 dried peppers (whichever suits your fancy. I use jalepenos, but chili peppers work well too), coursely chopped 1 tsp sea salt 1/2 tsp lemon pepper 1/2 tsp chili powder Puree seeds in a food processor or blender. Heat oil and saute garlic for about 30 seconds. Pour garlic and oil into blender with the pureed pumpkin seeds. Add stock, lime juice, peppers, salt and lemon pepper to the blender mixture. Process until mixture is pureed. Refigerate before serving. Sprinkle with chili powder before serving. This is great for chips and such, but fantastic with fresh chopped veggies.
