Guest guest
You can use more ground almond meal and bit more Sprouted spelt or wheat flour; the key is to get a soft dough like consistancy. The balls will have a more velvety consistancy without the coconut too. Just make sure you are using sprouted flours. Since you are not baking this mixture you dont want to load your body up with unsprouted and unbaked flour. (not that you would want to ever use anything but unsprouted flour for anything anyway!) So far i have not found any limitations to using the sprouted flours. I have used them in several traditional recipes now as well as to bind things such as the chocolate and also veggie patties. There is a recipe on the SproutPeople Site that is very similar if you would prefer to follow it. They only suggest using coconut as a coating and they dont use flour. http://www.sproutpeople.com/cookery/torte.html Sylvia herbal remedies , " ELIZABETH ELLIOTT " <eliz3378@e...> wrote: > how can i make this without the coconut? what could i use instead? > > Peace and happiness, > > Elizabeth Elliott, Birth Doula and Childbirth Educator > > COCO LOCO BALLS > > > l/2 cup Coconut oil > 1/3 to 1/2cup Agave nectar used ½ c. + 6 T. > 1 tsp Vanilla extract or scrapping of one whole Vanilla pod didn't use > 2 to 5 T cocoa powder used 3 T > 1/2 cup ground sprouted almonds > 1/4 cup almond butter > 1/4 to 1/2 cup shredded coconut used ½ c. > 1 to 3 T sprouted spelt flour used 3 T. > *optional 1/4 tsp cinnamon > *optional 1 tsp super fine ground coffee or espresso bean powder didn't use > > Melt coconut oil in double boiler on lowest heat setting making sure not to heat oil any more than is necessary to melt the coconut oil; slowly add the 1/3 agave nectar stirring to blend, remove from heat. Continue to stir while adding Vanilla, cinnamon and coffee, and then add cocoa powder. Taste for adjustment, if too sweet add more cocoa, if not sweet enough add a little more agave nectar. Still stirring add ground almonds and then almond butter, mixture should now be a wet fudge consistency. Add shredded coconut. If mixture still seems a bit too runny sprinkle and mix in a little of the spelt flour. > > Mixture should be warm, but cool enough to handle. Guest guest
Me, too, Sylvia. I have a regular brownie recipe that I’ve used the wheat and spelt in with no noticeable difference. Although I have to say I hadn’t made brownies for years so probably don’t remember what they really taste like LOL. I even used the EE cereal by accident one time and they were just a bit chewier!!
