Fruit Rollups - Teflex, etc

OK here goes....

 

I tired using wax paper when i did my first roll-up and it imparted a

waxy flavor and smell to the fruit; IMO i would guess some of the wax

is on the roll-up.

 

When you use the teflex sheets, you only use them enough to get the

fruit to a leathery consistancy and if it needs more drying you

should be able to remove from the teflex and finish drying on the

rack. The sheets appear solid but they are actually a super-fine

mesh. They do not impart any flavor to the food at all.

 

I never EVER dry anything above 95 degress. at 105 you are most

likely killing everything that is nutritional. even at 93 or 95

degrees, nothing takes more than 48 hours to dry and thats is with

every tray full. Crunchy fruit roll-ups or even dried fruit means

you are drying at too high a temperature.

 

If any of you have the type of dehydrator that has one temperature

setting then try propping it open periodically to regulate the temp

so that it does not exceed 95 degrees. Same thing if you are oven

drying. Use a thermometer to check and regulate.

 

I had never done fruit or yogurt roll-ups before i got the dehydrator

and so it wasnt like i had a lot of experience, just did a lot of

reading and invested in a good machine.

 

Candace i use a little juice too if my pureed fruit is too lumpy or

thick :o)

I second that emotion! I tried Mango sauce, picked up an organic

jar somewhere, and there were chunks in it. As I hadn't tried that

type yet, I thought why not? Welp, short story, don't do it. LOL

Take the time to puree it, if you do fruit wraps. LOL. The chunks

take way longer than the sauce......

i never dry at higher than 105, but i will have to drop the temp down even lower i guess. thaks for the tip.
