Abstract: Using HPLC a fraction of New Zealand manuka honey has been

isolated, which gives rise to the non-peroxide antibacterial activity.

This fraction proved to be methylglyoxal, a highly reactive precursor in

the formation of advanced glycation endproducts (AGEs)…
