Pursuant to the honey discussion, does anyone have any recipes or

tips on how to substitute honey for sugar in baking?

About agave syrup for diabetics - I am a diabetic, and it's better

than most things, but not free. It can still cause a rise in blood

sugar unless used in small amounts. My preferred sweetener is the

sugar alcohol xylitol, or a similar one, erythritol. They act like

sugar, tho a little less sweet, but don't make most diabetics blood

sugar go up at all. You can use them one to one or add a little extra

to make the same sweetness. They have a sort of cool taste to them -

like a tiny touch of menthol. This is great in most things, but

sometimes a little odd in chocolate. If you make cinnamon rolls with

xylitol, almond flour and flax seed meal (plus eggs and extra egg

with pwd eggwhites) you can have a very delectable treat that is not

dangerous to your health in moderation. I add chopped walnuts and

cinnamon to it. The nuts have healthy fats in them and are so

satisfying you don't eat the whole pan.

 

For diabetics, the thing with sweeteners is a whole lot more

complicated - but truth is, too much sugar based foods, whether

natural fruit, fructose, or whatever, isn't all that good for any of

us. Dried fruit is delicious but really not a friend in quantity.
