I have read it is safe for diabetics but have not done any research yet as to why this is the case. It is made from a type of cactus, is sweeter than honey and has a light amber color and is a bit thicker than maple syrup. I love the taste and it works well in cooking. Best to buy from a food co-op in bulk and fill your own container as the Agave syrup already packaged is pricey. It is a great substitute for honey for those Vegans who are purist and do not consume any animal product including those of bees.
