If you'll read on a little farther, it has the formula for this preparation... (Purified Water; Capsicum; Sea Salt; Aloe Vera Gel; Eucalyptus Oil; Vitamin C as Ascorbic Acid, and Rosemary Extract). I would imagine that the Aloe Vera Gel takes the bite out of the capsicum. That would be my first line of thought. Then too they may not use the very hot varieties.
