Michelle, where did you find the above information?

Converting to measurements that mean more to most Americans, 3.53 oz. of

ghee would contain .01 oz cholesterol. That's .045 oz. of cholesterol in a

pound of ghee.

Not much, but more than what I have read and been told.

Though I coul not find my old notes, I did just look up butter in Udo

Erasmus " book FATS AND OILS. He did not have information on ghee but gives a

lot of info. about butter, saying among jother things that it contains about

a gram of cholesterol per pound. Therefore it would certainly seem that ghee

contains only

4 1/2 % as much cholesterol as butter does.

It has been my understanding that ghee (from which the solids have been

removed. Some folks leave them in. No idea why.) contains no cholesterol.

Several years back I was reseaching this for " American Ayurvedic " cooking

classes I sometimes teach, and checked a lot of sources. So long ago now

that I don't even know where my notes are, though. Remember a long

conversation with an American manufacturer of ghee. He said it contains no

cholesterol.

I'd like to have the most accurate info. However, the RESULTS of using

ghee are not in question. It has been eaten for thousands of years without

causing cholesterol problems in the populations relying on it.

People with high cholesterol should go easy on it just because they

should be eating a low fat diet.

My husband and I eat more than two pounds of ghee a week. He is a

Pitta/Vata and cannot eat too much oil. (Ghee may be cooling technically,

but Pittas cannot eat too much oil, period.) So most of that two pounds goes

into me, a Vata. We are both 57, and both weigh pretty much what we did in

high school. He weighs about 155 and his cholesterol level is 130. Lowest

his doctor has ever seen in a man. I weigh about 110 and my cholesterol is

about 145. Last time I was tested I had the best HDL/LDL ratio the physician

had seen.

I agree Ghee is great stuff- we use it profusely in our household- and we

dont have cholesterol or fat problems...

I just had to comment on the cholesterol thing- it seems to be a subject

that I need to look into more!! I have never heard of it having " no

cholesterol " and I have studied ayurveda for awhile, and from some well

known folks...what I heard was the lactose was removed, and the fat solids-

which does not necessarily mean all of the cholesterol-

I tend to think high cholesterol comes from poor quality fats and a diet too

high in refined carbihydrates- with little good fat- this (in my

opinion)causes the body to hold on to cholesterol-

we eat tons of ghee, olive oil and a bit of butter-

ghee is the best for cooking!

ROFL,

Outside in the snow, huh??? It's WARM here!!!! :) Sounds from Chris's e-mail

like it's warm in CO too.. wow! But.. a good old snowball fight sounds like fun,

doesn't it? Wait a sec.. just re-read that.. you did say TWO feet of snow???

Ack!!!!!! Umm.. I think I'll just slink off to the beach for a walk... <grin>

But.. a couple nights ago we had a " frost " here!!!! Had to cover the little

lemon tree with a sheet. Poor thing! Looked like a ghost out there! :) Warmer

now.......

Low fat diets??? No, no, no no no no!!!!!! Not me. low fat, I've always

associated with lower taste!!! <laughing> Don't use Crisco.. it just looks..

um, like plain ole fat? <grinz> But, I " do " <ducking to avoid that snowball>

cook things in bacon grease.. heck of a yummy taste :)

And, Chris, (may as well write to ya both as well as the list at the same time,

confuse myself in the process probably.....) I don't like lobster or that kind

of stuff, so I don't know what you dip it in, I KNOW, we live on the shore

almost.. and they have tons of fresh seafood, I just don't like it! LOL Now,

meat, I like that.. gosh, I eat unhealthy...........my problem's more that I

forget to eat, all the time... and then remember when I feel like garbage! Love

to cook though.. but if nobodies here to eat it, I forget about it while doing

other stuff. DUH!!!!!!!!!

Ok, getting the idea here.. nutty kinda taste that tastes like something I'd dip

a lobster in that I wouldn't eat... hhhhhhhmm... what else can I dip in it?? :)
