Guest guest Posted January 5, 2002 Report Share Posted January 5, 2002 Okay folks- I think I am getting to the bottom of this- it seems ghee contains no oxidised cholesterol- or trans fatty acids... Ghee contains : 65% of Saturated Fat 32% of Mono-unsaturated Fat 2% of Linoleic Acid and < 1.0% of Alpha Linoleic Acid Saturated fatty acid is the predominant fatty acid in Ghee 100gm of Ghee contains 300 mg of cholesterol 100 gm of fat 65 gm of saturated fatty acids Another interesting fact is pointed out by Dr Saini, author of Create a Healthy Heart. He writes, " Ghee or clarified butter is a better choice than margarine and refined oil.. Cholesterol itself is not harmful but becomes harmful when it is partly broken down or oxidized by unstable chemicals called free radicals. Ghee and particularly organic ghee has no oxidized cholesterol or trans-fatty acid and is very stable at higher cooking temperatures.. " The lack of trans-fatty acids and presence of HDL (good cholesterol) are elements that have been shown to promote healthy bodies and healthy hearts.
