I'd like to add that good ol' butter can be vastly improved by taking the cholesterol out of it by clarifying it. Making it into what is also called ghee. You will see the gunk that is left in the bottom of the pot when you are done and be happy to know that this stuff is NOT going to end up in your arteries. Guest guest Posted January 4, 2002 Report Share Posted January 4, 2002 The way I learned from my Mother was to heat the butter, let it melt and begin to cool a bit. When it separates there will be clear oil on top and light thick substance settled in the bottom. Carefully ladle/spoon the clear liquid off, and placing it in another container. There are good things in whole, unheated butter made from raw cream- valuable enzymes and nutrients lost in heating- though- most arent fortunate enough to have a source of raw, unpasteurized, unhomogenized milk!! Guest guest Posted January 4, 2002 Report Share Posted January 4, 2002 Hello Actually, too, clarifying your butter, or making ghee, does not in fact remove the cholesterol(which has a bad name, but is necessary for many bodily functions) but removes the milk proteins, or casein, and makes it tolerable for those with dairy allergies...it still has cholesterol and saturated fat...which arent nescessarily bad for you!!!
