Here is the recipe for the ones I just made: Scottish Butter Cookies 1 cup (8oz) unsalted butter, room temperature 2/3 c. sugar 2 c flour 2 tsp vanilla 1/4 tsp salt powdered sugar Cream together butter and sugar. Slowly add flour sugar and salt. Mix well. Press mixture into a 10x15 jelly roll pan. Sprinkle with powdered sugar. Bake in a preheated 375F oven for about 20 minutes, or until very light golden in color. Cut into bars. Hey Ann (our list-mate in Scotland), is this recipe REALLY authentic? Yep! the recipes vary but this is shortbread! You'll notice that most Scottish recipes contain lots of fats and sugars That is why Scotland has the highest heart disease rate in Europe!
