Happy Thanksgiving,

This recipe was passed along to me from my Lemon Myrtle (Backhousia

citriodora) distiller's wife.

Crust:

2 cups crushed wafer cookies,

125 gram butter.

Melt butter, add to cookies. Press into springform pan.

Filling:

250 grams cream cheese,

1 tin condensed milk,

half cup of lemon juice.

Beat cream cheese, gradually add condensed milk, then lemon juice.

Add 1-2 drops Backhousia citriodora oil, stir. Pour into shell and chill.

Chris's Lemon Myrtle Cheesecake starting my brain rolling. My aromatherapy

group will discussing the use of essential oils in cooking for it's January

meeting. I do have a Mindy Green & Kathi Kevilli book with a small chapter

devoted to this area. If anyone has any recipes or helpful hints, I would

appreciate hearing from you. Thanks!
