Also any ideas for a simple dribble chocolate topping type thing? Guest guest Posted November 21, 2001 Report Share Posted November 21, 2001 Hello Kathleen, This is the recipe I always use and it comes out yummy everytime. If I can do this one anyone can.... Mix 16 oz of PHILADELPHIA Cream Cheese, softened, 1/2 cup sugar, and 1/2 teaspoon of vanila with an electric mixer at medium speed until blended. Add 2 eggs, and mix until blended. Pour into your pie crust (I use graham crackers or oreo cookies) (6 oz or 9 inch pan) Bake at 350 for 40 minutes or until center is almost set. Cool on wire rack for 1 hour. Refrigerate uncovered for 3-4 hours. Cover with plastic wrap. Here's the secret to a good cheese cake: Only use Philadelphia cream cheese, generic brands don't make it. Bake in a moist oven - fill a 13x9 inch bakeing pan with water and place on bottom rack. Place cheese cake on middle rack above pan of water. Don't peek during cooking - lets out the moisture. DON'T OVERBAKE. The center of the cake (about the size of a silver dollar) will appear soft and moist. It will firm upon cooling. Don't over beat - just until blended. Graham Cracker Crust 1-1/2 cups graham cracker crumbs 3 tbls sugar 1/3 cup melted butter Mix, press into bottom of pan Chocolate Cookie Crust omit sugar and reduce butter to 2 tbls substitute crushed chocolate cookies for graham crackers Chocolate Drizzle Place 1 semi-sweet (I like giradelli(sp))chocolate square in sandwich bag. Close tightly and microwave for 1 minute or till chocolate is melted. Snip off a corner of the bag and drizzle chocolate through the opening onto the cheesecake. Garnish your cake 1-3 hours prior to serving. I have a few more chocolate receipes - Chocolate, Chocolate Chip, White Chocolate, etc. I'm not a chocolate fan so I prefer the plain or occassionally fruit cheesecakes. Wish I could get Carnigie Deli's cheesecake recipe. Never been able to figure it out. Ordered one for hubby's B-Day next month as a surprise...mmmmmmmm! He better share. Kathleen, I make a New York Style cheese cake that ,if not overcooked, is mouthwatering. Here is the basic ingredients list: Cream together at room temperature: 2-8oz pkgs. Cream Cheese 1 can sweetened condensed milk Add: 3eggs ( I use Jumbo ) To this base I add 1 sm. jar ( 8oz) Peach preserves or strawberry jam, I would think for a chocolate cheesecake, you could add 8 oz of melted chocolate, but I would add the melted chocolate to the sweetened condensed milk before beating it into the cream cheese. Put in any crust, ie... graham cracker, vanilla waffers, ginger snaps, chocolate wafers, etc.... * Before pressing crust into pan, rub with a thin layer of butter or oil and dust with granulated sugar. Bake in a Bain Marie for 75 minutes at 350. * A Bain Marie is a water bath, like a double boiler in the oven. Start with the water cold and sit the cheesecake into the water so it comes at least 1/2 way up the side of the (cheesecake) pan. By starting with the water cold, the cheesecake won't get too done on the edges before the center is done. Check for doneness by shaking the pan, if the center of the cake shakes like jello, remove from oven and let sit. Something called (carryover cooking) will finish the cake. Chill and serve. * To make a Ganash ( topping )to drizzle over the top of a chocolate cheesecake, put about 1/2 lb. of bittersweet chocolate in the top of a double boiler with about 1/3 cup half & half or heavy cream and melt together. A little almond extract added to it will give it a nice taste. Any flavoring can be used such as vanilla, hazelnut, orange, rum, etac.........
