Great Recipes - Biscotti Anyone?????

I need a GREAT biscotti or cantuccini (mini biscotti) recipe if anyone has

one. My son is not doubt a Gindaloon like the rest of us (that is our word

for Italiano ;) He LOVES biscotti and cantuccini (and manicotti and olives

and caponata .... :) , but a box is stupid expensive at the store when I can

just make it the next snowy day (Friday ;) If on-one has a good recipe I'll

post whatever I end up making myself :)

I'm making Chocolate Biscotti right now it smells yummy want this one? I

got the recipe from my x italian SIL its a simple recipe i seen similar

online! I'm looking for a goood italian white bread..the flat bread recipe

you sent was sooo good!

So far this is my fav Chocolate recipe but i am looking for a good vanilla

with macadamia nut one lol!

 

4 oz Unsweetened chocolate

1/2 cups Butter

3 large Eggs

1 1/4cups Sugar

3 cups All-purpose flour

1/2 tsp Baking powder

1 1/2 cups Nuts I chop em slightly

1 Egg white

1/2 tsp Vanilla or Almond Extract (depends on which nut i use)

 

 

Melt chocolate and butter in a heavy saucepan over low

heat. Beat eggs at medium speed with an electric mixer until frothy;

gradually add sugar, beating until thick (about 5 minutes). Add chocolate

mixture, stirring until blended. Combine flour and baking

powder; stir into chocolate mixture. Stir in nuts. form dough into a 13 "

log. Place on a lightly greased baking sheet. Brush with egg white Bake at

350F for 45 minutes; cool on a wire rack. Cut log with a serrated knife

crosswise into 24 (1/2-inch) slices, and place on an ungreased cookie sheet.

Bake at 350F for 10 minutes on each side. Remove to wire racks to cool.

Dear Chris,

 

I was cleaning out my " mail waiting to be sent " box and found this old note

I'd written to you. For some mysterious reason, it ended up in the hold box

instead of delivered. (I'm assuming I'm the mysterious reason but how? I

don't have a clue;-P )

I'm wondering if you found a biscotti recipe yet.

 

MANY years ago, an Italian friend served me biscotti. That was a new taste

treat for me and it was heavenly. This cookie was oddly shaped, kind of hard,

much dryer and less sweet than any cookie I'd ever had (and if memory serves

me, less sweet than any biscotti I've gotten at a grocery or cafe since).

They were about 1/3 as long as the biscotti I buy now. She was first

generation American & this was her grandmother's recipe so I'd guess it was

authentic although she called them biscotti (not cantuccini).

 

At Christmas, she and I made some together. I couldn't believe there wasn't

some secret ingredient because they were so good. I ended up NOT including

them on the assorted cookie plates we'd put together as gifts because I LOVED

having them with hot tea, I didn't like the kneading and the mess and didn't

want to have to make more any time soon. I forgive myself because I was

pregnant;-) (didn't like to cook) Still, I was young and optimistic so I did

ask her for the recipe.

 

I never have embraced baking anything (except cakes) but, being a pack-rat

I've held onto the recipe. I'm including it here although I wonder if you

might want to fiddle with it a bit. (shortening???!!!) - you could chop

macadamia nuts but I have no idea at what point you'd add them to the dough.

 

Biscotti

 

OVEN 350

 

6 eggs

1 1/2 C. sugar

3/4 C. milk

8 tsp. baking powder

11/2 tsp. vanilla

1 C. shortening

6 C. flour

1/2 tsp. salt

 

 

Sift flour, baking powder, & salt together into large bowl.

 

In another large bowl, cream together sugar & shortening.

Mix in eggs vanilla & milk.

 

Gradually beat the flour mixture into the creamed mixture.

Turn out on floured board and knead until smooth, adding flour as necessary.

She didn't write how to shape & cut the dough and sometime in the last 20

years I've forgotten what we did, but if you've already made chocolate

biscotti, you know what to do.

 

Bake 15 minutes on ungreased cookie sheets.

 

Dust lightly with powdered sugar when they're cooling.

 

These would be pretty cheap to make if you leave out nuts.

 

These were really pretty hard and dipping was part of the treat.

 

I'm looking forward to hearing if you eventually make vanilla biscotti. If

you post your final recipe, I plan to bite the bullet and actually make some

myself.

 

Finally, I would add that if you have a Sam's Club Warehouse where you live,

they sell jars with 22 huge biscotti for about $7. The choices are

chocolate, plain, hazel nut, & dk choc. coated on one side. They're all YUMMY

..
