Applesauce Spice Cake

Chris' Applesauce Spice Cake

 

2 1/2 C. Flour

2 Cups Sucanat or Brown Sugar

2 Cups Unsweetened Applesauce

1/2 Cup (1 stick) Butter

1/2 Cup Water or Apple Juice(if you have a sweet tooth)

2 Eggs

1 1/2 tsp. Baking Powder

1 1/2 tsp. Baking Soda

1/2 tsp. Salt

1 1/2 tsp. Vanilla Extract

1 1/2 tsp. Cinnamon

1/2 tsp. Cloves

1/2 tsp. Allspice

1/2 tsp. Nutmeg

1 cup each Raisins and Walnuts (Optional)

 

Powdered Sugar For Dusting Cakes

 

Preheat oven to 350 F. Grease and flour 2 cake pans or get cupcake pans

ready with papers. Combine all ingredients, except powdered sugar, stirring

in raisins and walnuts last. Pour into pans. Bake in the top 1/3 of the oven

for about 30 minutes or until done.. when a toothpick inserted into the

center comes out clean. (*Note*: Cupcakes cook faster than full size cakes)

Cool completely. Dust with powdered sugar :)

Hey,

My kid does not like chocolate and run of the mill junk food, he likes

apples, so I have to be a little more creative ;)

ah, we do organic here.......and organic sugar is *so* much tastier than the

ole run of the mill corn syrup!! LOL

 

trader joes has some dynamite organic dark chocolate......oh, and milk

tastes the way it used to when we'd visit the dairy =)

Just a hint for all you organic freaks(like me)- because , as far as I know,

there is not organic powdered sugar-you can make your own(kind of) by

buzzing sucanat in the coffe/ spice grinder, and adding a bit of arrowroot

to it( for an added calcium boost,and fluffiness). Its not quite the white,

fluffy same but closer!

I wish someone would make og powdered sugar.

Hi Angie,

 

Arrow Root also makes a good body powder - adding herbs and/or essentials to

it... smells good and is good for you. Make sure to not exceed the

drops needed of essentials and also if you're using any kind of herbs, that

they're really almost powdered.. and, above all, safe for bodycare

use!

It's really nice though.........smells good, feels good! :)
