You want to avoid using metal pots, especially aluminum. (It's a good idea

to avoid Al for any food or beverage preparation.) I use a glass coffee

pot. Shane's suggestion of a crock pot is excellent. I think you'd need one

with a low setting that doesn't overheat. (Note to self: Get around to

trying this.)

 

So far I haven't used any herbs that smell vile. I cook them in the

kitchen.
