Hi Diana, All

 

Thank you for encouraging us to participate.

 

I would like to suggest this salad dish that is soooooooo refreshing

for summer. Tabouleh is a middle eastern salad that is very

nutritious, easy and refreshing.. I usually do not go by measurements.

 

Note: The main ingredient is parsley, so it is full of iron. If you

know you have high levels of iron, this is not recommended for you.

 

Ingredients:

 

2 bunches of parsley (medium size)

1/4 bunch of mint (optional)

1 tomatoe

1/2 cup medium sized bulgar

1 medium onion

1 lemon

1/2 cup extra virgin olive oil

Salt as needed

 

 

Method:

 

Clean the bulgar and soak in hot water for 15 minutes or so to get

soft and does not crack when you eat it.

 

Stack the parsley sprigs in a new bunch so that the leaves are all

leveled (we do not want to include the stalks).

 

Cut the leaf part and discard the stalk part.

 

Cut the leaves very finely by a sharp knife ( the finer the better -

and this is the secret of this dish. If the parsley is cut in a food

processor it looses the good juices). You can prepare the parsley and

keep it in the fridge to mix the next day.

 

Wash it in a sieve, place paper towel to absorb the water.

 

Cut the tomatoe into very tiny pieces and sieve the water.

 

Mix the parsley, bulgar, tomatoes, onion, now cut and add the mint

(this is left till the end in order not to turn black). Mix the salt,

oil and lemon in a separate cup and pour over the tabouleh. The end

result should look mostly green, it should not be overpowered by the

bulgar or the tomatoe.

 

Place in fridge in order for the juices to incorporate.

 

Serve with cucumber slices and lettuce leaves on the side, or the

tabouleh scooped on endive leaves.

 

Alternative method:

 

I sometimes substitute or add coriander instead of parsley. Coriander

is a heavy metal cleanser in the body. So since I removed my silver

amalgams, I have been eating coriander tabouleh and paste to chelate

the mercury.
