Lefse And Peanut Butter

 

I have an unusual combination - one I've eaten since

childhood:

 

Lefse and peanut butter. For the uninitiated, lefse is a

Norwegian potato flat bread.

 

Note from Chet: If you can't find Lefse, you can mail

order over the Internet. Here's a place that looked

good to me, though I haven't ordered from them:

Take a sheet of lefse, spread with a thin layer of peanut

butter, sprinkle with a little unrefined sugar and some

cinnamon, roll up and eat!

Laura's Veggie Sandwich

 

Hey, Chet, I have a favorite veggie sandwich that makes a

good lunch:

 

Mash 1/2-1 avacado (sometimes I squeeze in a little

garlic with my garlic press, and add a little celtic sea

salt) spread on 2 slices of bread, preferably whole

grain, homemade is best top with sliced tomatoes, sliced

mushrooms, grated carrot, sliced cucumber, lettuce,

alfalfa sprouts, (whatever other crunchy veggies I can

find) put sandwich together and cut in half diagonally

yum!! and healthy!

Three Quickies From Barbara

 

On the pb/banana sandwich there were two favorites with

my kids:

 

Peanut butter with marshmellow spread instead of jelly.

 

Or to save calories:

 

Cut a " v " in the banana and fill it with peanut butter -

we called them banana boats.

 

Another healthy " boat " we would do:

 

(If you don't eat fish flavored prepared tofu works.)

 

Make tuna salad and put it in a leaf of Chinese cabbage,

Boc Choy, or even a rolled Romaine lettuce leaf.

 

Straight protien and less carbs.

 

(You can also fill a scooped out tomato with the tuna, it

is colorful and filling.)

Avocado Wrap Sandwich

 

1 whole wheat flour tortilla

1 tbs safflower mayonnaise

Slices of tomato

Slices of red onion

3-4 Sslices of avocado

Salt and pepper to taste

 

Umh Umh good.

Jenni's Grilled Cheese

 

Chet, this is my favorite sandwich.

 

Spray your pan with PAM

Take a couple slices of french bread, or any other good

bread

Put between the bread -

a slice of tomato

a couple cucumber slices

hot pepper cheese

Grill until cheese melts

 

Then add lettuce, spinach, alfalfa sprouts, mustard,

whatever you want.
