Guest guest Posted November 21, 2007 Report Share Posted November 21, 2007 Sun Dried tomato Hummus 15 ounces (2 cups) of cooked chickpeas 1/4 cup of chopped sun dried tomatos that have been rehydrated in hot water and drained 1/2 teas ground cumin Pinch cayenne powder 1/4 teas sea salt 2 tablespoons extravirgin olive oil 2 tablespoons water 2 tablespoon fresh lemon juice 1 small garlic clove, minced 1 tablespoons of red onion 2 tablespoons parsley In a food processor, pulse together the chickpeas, tomatoes, cumin, salt. With food processor running add the oil and water and blend until very smooth. Pulse in the lemon juice and garlic and red onion and parley.
