As it doesn't use milk, it is a yummy treat for those who can't tolerate milk products. 3 tbsp butter or margarine 3 tbsp unsweetened cocoa powder 1/3 cup unseasoned cold mashed potatoes 1/8 tsp salt 1 tsp vanilla extract about 4 cups of powdered sugar, sifted 1/2 cup pecans in large pieces (optional) Butter a 9x5-inch loaf pan In a medium microwave-proof bowl, heat the butter and cocoa in the microwave until the butter is melted, about 45 seconds. Stir to blend. Add the potatoes, salt and vanilla, mixing thoroughly. Blend in the powdered sugar a little at a time until the mixture is thick and reaches the desired consistency. If ncessary, knead by hand until the candy is smooth. Add the nuts if desired. Note: when you first start to add the sugar, the potatoes will turn to liquid but will obtain a better consistency as you continue to add sugar. Press the candy into the buttered pan. Refrigerate about 20 minutes or until set. Cut into squares. Store in an airtight container in the fridge. Access over 1 million songs - Music Unlimited.
