Guest guest Posted August 17, 2006 Report Share Posted August 17, 2006 Bob's Orange Crunch Cookies 1/2 cup butter 1/2 cup oil 1 egg 1 12-oz can frozen orange juice defrosted 1 tsp vanilla 2 cup whole wheat flour 1 tsp baking soda 1 tsp ginger 3 cups rolled oats 1 cup raisins 1 cup sliced almonds Cream butter in bowl. Add oil and eggs. Mix well. Add defrosted orange juice and mix. Stir in vanilla. Combine flour, ginger, and baking soda. Add to liquid mixture mixing well. Stir in oats, raisins and almonds. Drop by rounded tablespoons onto ungreased cookie sheet. Use the spoon to flatten each one to about 1/2 inch thick. Bake at 350F for 10-15 minutes or until edges start to burn. Cool one minutes on cookie sheet. Makes three to four dozen depending on size. --- Bob's Coconut Raisin Oatmeal Cookie Here is one that I changed from your site using quinoa. My health food store clerk didn't know what quinoa was. These are good also. 1 cup butter softened 2 eggs 1 12-oz can frozen apple juice defrosted 2 Tbs vanilla 2 cups favorite flour 1 tsp baking soda 1 tsp ground cinnamon 1/2 tsp pumpkin pie spice 3 cups rolled oats 1 cup raisins 1 cup shredded coconut (These usually have sugar in them. I haven't tried to buy it at the health food store.) Cream butter in a bowl. Add eggs and vanilla; mix well. Add defrosted apple juice and mix. Combine flour. baking soda, cinnamon and pumpkin pie spices. Add to liquid mixture. Stir in oats and raisins. Mix well. Drop by rounded tablespoons on ungreased cookie sheet. Bake at 350F for 10-15 minutes until light golden brown on edges. Cool one minute. --- Bob's Christmas Cookies 1 cup butter softened 2 eggs 1 12-oz can frozen orange juice defrosted 2 cups whole wheat flour 1 tsp baking soda 3 cups rolled oats 1 cup fresh cranberries - cut large ones in half canned cranberries can be used, but drain good. Cream butter, add eggs; mix well. Add defrosted orange juice and mix. Combine flour and baking soda; add to liquid mixture. Mix well. Stir in oats and cranberries; mix well. Drop by rounded teaspoons onto ungreased cookie sheet. Bake at 350F for 10-15 minutes until moisture is gone. Cool one minute. (Maybe green coloring could be added to the mix, but I have never tried it. I just thought of it.)
