Guest guest Posted August 17, 2006 Report Share Posted August 17, 2006 Bob's Pinacolada Cookies (Non-alcoholic, just pineapple and coconut) 1 cup butter 2 eggs 1 tsp vanilla 1 12-oz can frozen pineapple juice defrosted 2 cups whole wheat flour 1 tsp baking soda 3 cups rolled oats 1 cup crushed pineapple strained 1 cup shredded coconut Cream butter in a bowl. Add eggs and vailla. Mix well. Add defrosted pineapple juice and mix. Combine flour and baking soda. Add to liquid mixture. Mix well. Stir in oats, coconut and pineapple, Mix well. Drop by rounded tablespoons on ungreased cookie sheet. Bake at 350F for 10-15 minutes until light golden brown. Cool one minute on cookie sheet if you can. Cool completely. Store in air- tight container those you haven't eaten because they taste so good. --- Bob's Orange Carob Chip Cookies 1 cup butter 2 eggs 1 12-oz can frozen orange juice defrosted 2 cups whole wheat flour 1 tsp baking soda 3 cups rolled oats 1/2-1 cup carob chips or chocolate chips Cream butter. Add eggs and stir well. Add defrosted orange juice and mix. Combine flour and baking soda in a separate container. Add to liquid mixture. Mix well. Stir in oats and mix well. Add carob chips to desired amount. Drop by rounded teaspoonfuls onto ungreased cookie sheet and shape into round forms. Bake at 275F for 10-15 minutes until moisture is gone. Cool one minute on cookie sheet. Makes 2-3 dozen depending on size.
