Guest guest Posted August 10, 2006 Report Share Posted August 10, 2006 Gouda and Olives Mini Skewers with Whiskey Yogurt Sauce -- Stonyfield Farm This is a very relaxing and trendy dish. Ingredients 1 cup Stonyfield Farm organic lowfat plain yogurt 2-3 tablespoons extra-virgin olive oil 1 tablespoon apple cider vinegar 1 tablespoon apple cider 2 tablespoons whiskey 1/2 teaspoon sea salt, or to taste Fresh ground black pepper to taste and to garnish 11/2 tablespoons dried oregano 6 oz Gouda cheese, cut into 1/2 inch to 1 inch cubes 1/4 -1/3 cup pitted kalamata olives, cut in half Small skewers, about 4 inches long Directions In a bowl, place Gouda cheese cubes, olive oil, vinegar, apple cider, whiskey, salt, pepper and 1 tablespoon oregano. Mix and marinate for 2 hours. Separate cheese from marinate. Take marinate and blend in yogurt, adjusting seasoning if needed. Pour into a small serving cup. Skewer one cheese cube with one piece of kalamata olive and place it on a serving platter. Assemble about 10 skewers. Place the remaining cheese cubes and kalamata olives on the same platter. Sprinkle 1/2 tablespoon of oregano over the cheese and olives and serve with whiskey yogurt sauce.
