Plantain Fritters (Arañitas)3-4 large green plantains, shreddedSalt and freshly ground pepper to tasteVegetable oil for fryingSeason the shredded plantains generously with salt and pepperand form into small patties by squeezing small handfuls verytightly. Heat about 2 inches (5 cm) of oil in a large, heavy skilletover high heat until it reaches 375F (190C) or until a small pieceof plantain sizzles immediately when it hits the oil. Fry the pattiesin small batches until crisp and golden brown on both sides.Drain on paper towels and serve immediately. Arañitas can bemade in advance and reheated in a 350F (180C) oven for 20 to25 minutes with excellent results. Serves 4 to 6.Bon appetit from the Chef at Worldwide Recipes.

I grew up in Panama and we did almost this, but called Patacones. You make the patties, fry them, smash them with a clean rock, fry them again and serve. YUUUUUUMMMMMMM. They look awful but they taste wonderful.
