Apricot Shortcake Recipe6oz plain flour pinch of salt1 teaspoon cinnamon1 teaspoon mixed spice4oz butter1 beaten egg3 tablespoons apricot jamicing sugar to dredgeSift the flour, salt, cinnamon, and mixed spice into a bowl and rub in the butter, lightly. Bind with the beaten egg. Turn out on to a lightly floured board and knead till free from cracks. Roll the shortcake out thinly and use half to line a swiss roll tin. Spread liberally with the apricot jam and cover with remaining pastry. Bake in a moderately hot oven (390F) for 20-25 minutes or till golden brown. Dredge with icing sugar and cut into squares. Makes approx 18 pcs.Scottish shortcake is really, really good...
