I have 2/3 cup of it every morning with lowfat yogurt. It's delicous. Homemade Maple Syrup Granola - Nancy Simmonds Mix well in a large bowl: 10 cups oats 2 cups coconut 3 cups nuts (either mixed or same kind: pecans, walnuts, sliced almonds) 1 cup sunflower seeds - raw preferred ¾ cup sesame seeds Dump into a large greased baking pan - I use a full-size aluminum disposable pan. Bake at 300 degrees for 30 minutes, stirring every 6 minutes. While that is baking, stir together in a sauce pan the following ingredients: 1/3 cup butter 1/3 cup canola oil 1 cup pure Maple Syrup (not flavoring) or honey; or half of each 1 cup brown sugar (packed) Stir and cook this together until the butter melts. After the oatmeal mixture has baked for 30 minutes, stir well , then, stir the butter/sugar mixture into it (until moisture is gone) and bake it again for 7 minutes. Stir well and add: 1/2 cup wheat germ (mixed into dried fruit to prevent sticking) 3 cups mixed dried fruit 1 ½ cups diced dates or raisins (or both) Stir well and bake again one more time for 7 minutes. Remove from oven then spread it out on foil to cool (it will be wet). Then break apart and store in an airtight container. Freezes well. Yields about 20 cups.
