Guest guest Posted July 22, 2006 Report Share Posted July 22, 2006 HERBS 'N SPICES: HERB RECIPES Berry Lemon Vinegar Ingredients: 2 cups vinegar (distilled, wine or cider) 2 cups red/black raspberries and/or blackberries 6 sprigs of lemon balm or lemon verbena Bring the raspberries and vinegar to a gentle boil in a non-aluminum pan over medium heat. Simmer for 2 minutes or so. Allow to cool, then strain through a piece of cheesecloth into a bowl, pressing the berries as you do so till all liquid is drained. Place the lemon balm in a glass jar and pour the strained vinegar over it. Cover and store in the refrigerator. Some people add pinch of sugar as well. Use in recipes calling for herb vinegar or raspberry vinegar. Berry Balm Syrup Ingredients: 2 pints strawberries, raspberries, or blackberries 3 cups granulated sugar 10 sprigs fresh lemon balm or lemon verbena Wash and clean the berries. Place in a bowl and crush the berries with a potato masher until the juices are released. Strain through a piece of cheesecloth into another bowl, squeezing the berries until all liquid is drained. Measure/weigh the juice and add the same amount of sugar plus the lemon herbs to a non-aluminum pan. Bring to a boil, and simmer for 5 minutes. Remove from the heat, skim foam and allow to cool. Store in a covered jar in the refrigerator. Lemony Herb Tea Ingredients: 1/2 cup dried lemon balm leaves 2 tablespoons dried lemon thyme leaves 1/2 cup dried lemon verbena leaves 1 tablespoon dried lavender blossoms Optional: tsp. dried lemon grass and/or lemon mint Mix the dried herbs together and store in a covered jar away from light. Use 1 tsp. for each cup of boiling water for hot tea. Sweeten as desired. Lemon Herb Sun Tea Ingredients: 1/2 cup spearmint, peppermint, or apple mint 1/2 cup lemon balm 1/2 cup chamomile flowers 3 black tea bags, any flavor you wish Place the herbs and tea in a gallon jar. Fill with cold water and set in the sun for several hours. Remove the herbs and teabags, then serve over ice, chilling any leftovers. Rose Herb Tea Ingredients: 1/2 cup dried organic rose petals 2 tablespoons dried lemon balm 2 tsp. dried lavender buds Mix well and place in a covered container or jar. Use 1 teaspoon for each cup of tea. Pour boiling water over the herbs, strain (or use an infuser, after brewing 5 minutes. Sweeten.
