A study from the U.S. Department of Agriculture's nutrient requirements and functions lab in Beltsville, Maryland, confirmed previous research showing that cinnamon can help lower both cholesterol and glucose levels. Researchers found that as little as quarter teaspoon of cinnamon extract taken twice a day may also relieve arthritis and other inflammatory conditions. Cinnamon appears to increase levels of key proteins involved in the insulin-signaling processes, glucose transport, and a healthy inflammatory response. Just sprinkling powdered cinnamon on your food won't do the trick though, because the spice is destroyed by saliva. However, cinnamon extract capsules are available, and the researchers suggested that you might get benefits by adding cinnamon to coffee before grinding it or using cinnamon sticks to make tea. The same research team also conducted a very small study, which found that consuming one, two or three grams of cloves in capsule form for 30 days lowered glucose, triglycerides and LDL ("bad") cholesterol. The cloves had no effect on HDL ("good") cholesterol. Results of both studies were presented on April 4, 2006 at a meeting of the Federation of American Societies for Experimental Biology.
