Contrary to what the article contends, hydrozylation was not invented to deliberately hide MSG to food (how silly!), but to start digestion so the components are more easily assimilated. Increasingly manufacturers are abandoning hydrozylation as they find better and more cost-effective ways to process. Case in point would be undenatured whey. Brands exist today that have not been hydrolyzed but filtered instead and so do not contain MSG. I hope we see more of that, as the filtered undenatured whey has about 30% more glutamine peptides because they haven't been broken down. These are important to glutahtione production in the body, which is a key part of a curative therapy and an important part of a health regime. Actually, free glutamic acid is not MSG but a common supplement that people use to increase stomach acidity (HCl) for digestion; it's " glutamate " , not glutamic acid, that's the issue, and most people clear glutamate just fine so can tolerate some MSG in their diet.
