If you want to read an excellent book that will help you understand why, get a copy of THE CHINA STUDY by T. Colin Campbell. It is excellent.... no, BEYOND excellent. I've cut out fatty beef all together, and only have lean beef once a week. I've also made the switch to fat~free milk. I don't think I could cut milk and cheese from my diet and still stay sane. If you eliminated all " dairy " fom the diet you'd also be eliminating one of the healthiest foods you could use, undenatured whey; I think an exception should be made. The only obligatory food of all mammals does not produce reaction in most people, it's the creature-specific components of milk that produce the reaction in any case, and these components are pretty well removed from undenatured whey, depending on the method. Undenatured whey is easily assimilated with almost no digestion, and it has the highest biological value of any protein. Plus, instead of being acidifying like most animal proteins, it's slightly alkalizing. And it is the highest provider of precursors of the body's most powerful detoxifier, antioxidant and healing agent, glutathione, which is also a crucial part of the energy cycle. In a position of ill health, the traces of glutathione precursors you'd get from your diet without undenatued whey may be only 10% of what you need, thus the healing pogress may be delayd by seva monthe compard to using it, and all that while the damage in your internal organs is ongoing unnecessarily.
