It's a fascinating look at why today'sconventionally-grown fruits and vegetables lack so many nutrients. The story begins: Most of the produce you buy in a grocery store doesnot have anything close to the mineral profile it is supposed to haveaccording to nutritional textbooks. This is because minerals are notmanufactured by plants, whereas vitamins and phytonutrients are. Whenplants create such nutrients, they synthesize them through chemicaland energetic processes that can only be called miraculous. But ascapable as they are, plants do not create minerals. Minerals have tobe absorbed through the soil, and if they are not present in the soil,then the plant's roots cannot take them up, and therefore they willnot be present in the plant.
