That's correct Elizabeth and thank you for adding that in here. For food storage you will want a higher temp but if you are wishing to eat raw then keep the temp less than 110 F or 43 C. This will ensure that the enzymes are still living and useful for the digestion of the food being eaten. It will also leave all the minerals and vitamin intact and organic without changing them into inorganic.

Hi Lynda, That would be about 62 - 65 degrees celcius. You mention 145 F but I don't have any idea what that is in relation to my oven!Lynda

Just to note- 145 is way higher temp than what is used in raw food preparation. The heat will destroy the food value. I can see we are talking about different things now in this thread regarding dehydration- dehydration for raw food enzyme value or dehydration for food preservation or storage, etc.Elizabeth

Heating foods over 115 F or approx 45 C destroys enzymes. Through the action of the enzymes the food breaks down partially in the upper part of the stomach. The rest is broken down by the body's digestive enzymes secreted by the pancreas. If a food has lost it's enzymes through heat the your body's internal store of enzymes must try to handle it all. This leads to incomplete or inefficiently digested foods and depletion of the body's enzymes.

Hi Lynda,

You might be able to get away with it if you leave the door ajar. 50 C = 122 F. Much too high for raw food but leaving the door ajar and keeping the food away from the element you might just be alright. Try it and see what happens. Experiment as they say.

My oven has a temperature of 50C on it and you can turn it lower though I don't know if the temperature actually goes down anymore. So would that be ok for raw food dehydrating or does it have to be dead on 43?

Thanks for everyone's input on this

Lynda
