Here is some info I found interesting even though it is not organic most of the info is good.

Q. What is black strap molasses?

A. Black strap molasses is molasses that has most of the sugars extracted.

Q. What is the different between your (Motts) gold and green label molasses?

A. Gold label is the highest grade of pure unsulphured molasses made from a blend of 100% pure sugar cane juices from several West Indian islands in the Caribbean; it’s the sweetest and lightest in color, without any sugar extraction and with many nutrients that nature produces in sugarcane.

A. Green label is a molasses that has had some sugar extracted. A cane juice molasses especially formulated for recipes or preferences calling for a heartier molasses flavor and a darker, richer color than grandma’s gold.

The only difference between gold and green is the sugar extraction from the original sugarcane liquid.

Q. What is unsulphured?

A. Unsulphured means: no sulfur dioxide (preservative) added, so totally pure.

Q: How can I use Grandma's Molasses as a sugar substitute?

3 tablespoons

2 tablespoons

 

 

1/4 cup of sugar

 

1/4 cup of molasses

 

1 tablespoons

Don’t reduce amount of oil the recipe may call for. Liquids to be reduced are water or milk.

 

This substitution will produce a more moist baked product that will stay fresh longer.

Use 1 cup of white sugar with 1 1/2 tablespoon molasses to yield 1 cup of brown sugar.

Q. Do I have to keep the molasses refrigerated after opening?

A. No, you can keep it in your pantry.
