Carolyn,

 

There's a kelp called Karengo that you can find there in Aussieland that is

delicious,

organic (not certified yet though), and would well work for this purpose. Let me

know if

you need help finding contact info.

Haven't found any Black Walnut trees yet, will keep looking though.

Norwegian dulse is another nono here. I will try the kelp in the next batch.

Hopefully I

will have found horseradish too, must be the wrong time of year.
